Kurmah Chicken

Ingredients:

2 chickens (clean and cut into portions)
185g butter
4 cardamoms
2 cinnamon
1 sweet cumin
185 shallots
7 cloves of garlic
4cm ginger
3 medium onions
4 cups of coconut milk
salt to taste
3 red chillies
4 green chilies
250g small tomatoes
lime juice

Ground Ingredients
2 tablespoons coriander seeds (dry fried)
3 1/2 tablespoons white peppercorns
3 1/2 tablespoons fennel
2 1/2 white cumin
125g cashews

Method:

1. Heat the ghee and fry the ground ingredients for 2 minutes. Add whole dry spices and fry until fragrant.

2. Add the shallots, garlic, ginger, and onions. Fry until tender. Add chicken and coat well with mixture. Fry about 4 min.

3. Add coconut milk and salt to taste. Mix well. Bring to a boil, stirring constantly. Reduce heat. Simmer covered for 10 – 15 minutes.

4. Add chiles, tomatoes and lemon juice. Cook until chicken is done. adjust seasoning and remove skillet from heat.

5. Plate and serve hot.

Even today, the traditional way of celebrating has lost none of its original pomp, charm or appeal to the finer sense of one and all.
